Flavé Brut and Mussels: Freshness Calls to Freshness

There is a specific moment at the beginning of a meal, when the palate is still fresh and clean, when every individual flavour registers with full intensity. That is the perfect moment for Flavé Rosato, our Vintage Brut Sparkling Wine crafted from the Incrocio Manzoni 13.0.25 grape. It is an uncommon variety, a cross between Raboso and Muscat of Hamburg, cultivated along the slopes of the first band of Dolomite foothills. In the glass, it appears an intense pink with a fine, long-lingering bead; to the nose, it offers aromas redolent of spring, even before the glass is raised to the lips.
It achieves true eloquence paired with mussels, whether au gratin with breadcrumbs and parsley, or simply opened in a pan with garlic and white wine: the key lies in a simplicity that is anything but banal. For the briny, iodine-rich character of the shellfish and the vivacious effervescence of the wine chase one another across the palate in a direct, unmediated dialogue.
